this wine comes from the parcel a6 of the melilla vineyard. we chose this parcel due to its remarkable qualities shown through analysis and sampling, which were evident in the grape during ripening and vinification. the pink-granite soil has good drainage, which allows for the fruit to be very close to the soil and taking advantage of the reflection of the light against the stone. using our careful process of elaboration, we developed this wine with great intensity and complex aromas, exemplary of the potential of this parcel of tannat. aged for 16 months in new french oak barrels. this wine was bottled unfiltered in october 2007, to preserve the special characteristics of the soil; for that reason, we recommend decanting and serving at 16-18°c.
in our boutique bodega we elaborate individually the wine of each parcel (winemaking by parcel). this procedure allows us to discover and to maintain each parcel"s special characteristics; as such, we can determine the best handling and winemaking methods for each harvest.
