the grapes are hand-picked before a 4 week fermentation and maceration in unlined concrete tanks. the wine is then aged for 15 months in tank or older barrels before being bottled at the domaine.
you can keep this wine for 3-4 years and drink it with grilled or roasted meats, or with a lamb tagine. decanting the wine won"t do it any harm.
