la quantita' di solfiti riscontrata non e' da ricondurre ad una determinazione della sola anidride solforosa, ma bensi' a una serie di sostanze naturali presenti nel vino ( polifenoli, sostanze coloranti, aldeidici e chetoni) che durante l'analisi dell'anidride solforosa vengono anch'esse quantificate in quanto possono essere titolate durante la titolazione iodometrica = the quantity of sulphite found is not to traced back to the calculation of anhydride, but in fact a series of natural substances present in the wine (polyphenols, colorants, aldehydrics and ketone) which during the analysis of the sulphurous anhydride are they themselves qualified in so much as they may be labelled during the idometric titration.
