the word "caggio," derived from the etruscan-lombard, means "sacred woods," and refers to the woods that border on the vineyards from which our wine originates. fattoria del cerro believes in native varieties and in nurturing them. the decision to make a wine from 100% colorino reflects this goal. caggio del vescovo is a wine of great character, with an intensely fruity and fresh bouquet. on the palate, it expresses a good acidic backbone and dense yet soft and elegant tannins. served in large, crystal stem glasses, it pairs perfectly with red and white meats, soups and medium-aged cheeses.
