kezako ? a rock and roll cuvée.
planted on gravel, these 40 year old cabernet franc vines reside in st nicholas de bourgueil. the grapes are harvested by hand into 7kg crates in order to preserve the integrity of the fruit. once at the winery the grapes are destemmed by hand and placed in their barrels which are then placed on rollers to allow fermentation to happen delicately. for 50 days the barrels perform a full rotation each day in order that the juice continually comes into contact with the fruit. after a light pressing the wine finishes its fermentation in barrels in the rock caves. eventually you receive this 750ml bottle of 12.5% alcohol wine that i have put into the bottle.
