william fevre domaine has more than 50 hectors in the middle of chablis, more than half are premier crus and grand crus. the harvesters grow this wine carefully for each appellation, respecting the fields with as naturally as possible.
the petit chablis is much smaller than chablis, which is a rarity. the parcels, planted exclusively chardonnay, are dispersed going under the chablis grand crus until reaching the neighbors (chichie, beine...) the appellation is supported in the subsoil, being a little newer than the kimmeridgian chablis, dating back to the jurassic period. petit chablis is enjoyed most as a young wine for the utmost freshness and intensity.
