cavas valmar is a small winery established in ensenada, b.c. in 1983. founded by the valentin and martain families. it is noted for experimenting with winemaking possibilities of the region.
this chenin blanc was made with grapes harvested in the santo tomas valley, fermented at low temperatures and aged in a wine cellar with controlled temperature.
of clean, bright and light yellow color, is fruty and floral. dry with good acidity, good body and equilibrium.
