cavas valmar is a small winery, established in ensenada, bc, in 1983. founded by the valentin and martain family. it is noted for its zeal in experimenting with winemaking possiblities of the region. this chenin blanc was made with grapes harvested in santo tomas valley, cold fermented and aged in cellars at controlled temperature. its color is a clear light yellow, clean and brilliant with floral and fruit aromas. dry, with good acid balance, fine body and equilibrium.
