"sallustio" is the name of a latin historian and senator of the romam republic from 86bc to 34bc
translation of the text on the back label:
produced with grapes grown in umbrian vineyards.
it is a good structured wine that will age well.
goes well with red meats, cold cuts such as salami and aged cheeses.

the labels submitted are just proofs with the informations that the ttb requires. these labels are submitted for approval as to make sure that the final label on the bottle matches exactly what the ttb approves. what you call "white outs" are just label corrections so as to give the printer the correct approved label ready for final printing and to be affixed on the bottle.
