"vino rosso dal colore rubino luminoso ottenuto da uve di ciliegiolo di vigneti che vanno dai 15 ai 50 anni. il mosto fermenta per 10 giorni sulle bucce con i lieviti indigeni in tini tronco conici aperti a temperatura libera; poi viene svinato e messo in una botte di vetro cemento dove riposa tutto l'inverno. grazie alla favorevole vendemmia, il vino ha subito un solo travaso per eliminare le fecce grosse, viene imbottigliato direttamente con la luna calante di fine marzo per preservare la bassa dose di solforosa naturale sviluppata. non si aggiunge solforosa in nessuna fase della lavorazinoe ne' in imbottigliamento. in vigna si seguono principi di assoluta naturalita' mirati alla custodia della vita della terra"="red wine of the color luminous ruby red obtained from the grapes ciliegiolo from vines ranging in age from 15-50 years old. the must fermented for 10 days on the skins in open top fermentation tanks with no temperature control. it was then pressed and racked into a glass-lined cement tank where it rested for the entire winter. thanks to a favorable harvest the wine only needed to be racked once to take it off the gross lees, it was then bottled directly by hand with the waning moon during march preserved only by the small dose of naturally occurring sulfur. no sulfur was added during any part of the wine making process or bottling. in the vineyards only methods of absolute natural agriculture are followed as we act as simple custodians of the land."
