the grapes of this super cab were hand harvested in the early morning hours on 10/15/2010, mildly crushed to open top fermenteor with hand punch down during primary fermentation. barrel aged on french oak and bottled unfiltered. although this wine was produced under the guidance of conor mccormack who is truly a great winemaker, i did all the actual work myself in a state-of-the-art williamsburg winery with help of some nice friends guided by a rabbi and its kosher for passover14.5 %
