production area the vineyard is situated at the foot of the mountainside in aosta at la
rochère at an altitude of 590masl. the plot has a ritocchino* layout and a southern exposure
with an average 10% slope gradient. the soil has a sandy loam texture and is rich in skeletal
material.
the vines are trained on a single guyot with a stock density of 8,000 per hectare. the endo-
alpine climate is dry and ventilated which favors growth.
grapes: 100% cornalin

from grapes to wine: the grapes were harvested during the third and fourth week in october. they were then de-stemmed, pressed and left to macerate in steel tanks for 15 days at a temperature lower than 28°c. punching down the cap was carried out by hand, frequency and intensity were proportionate to fermentation vigor. after racking, the wine was aged in french oak casks for 12 months, in steel vats for 3 months and for at least 1 more month after bottling.
production: 600 bottles.
wine characteristics and serving suggestions: ruby red in color. its characteristic scent is enriched by a toasted oaky aroma. it has a mellow, refined, elegant flavor enhanced by a good tannic quality. food pairings: game meat and venison in blueberry sauce . serve at 18-20°c.
