back: institut agricole regional is a foundation between the house of the hospitalier grand saint bernard and the region of valle d'aosta. for the purpose of development and agriculture through teaching, testing and production.
other: the vineyard is situated at the foot of the mountainside in aosta near la rochère at an altitude of 590 meters. the plot has a ritocchino (rows along the slope) layout and a southern exposure with an average 10% slope gradient. the soil is sandy loam, and rich in skeletal material. the vines are trained on a single guyot with a vine density of 8,000 plants per hectare. the alpine climate is dry and well-ventilated which favors growth. the grapes were harvested second and third week of september. they were then de-stemmed, pressed and briefly subjected to cold maceration (10°c). maceration continued in steel tanks for 16 days in a temperature-controlled environment (maximum 28°c). the automated pumpover system used to sprinkle the must onto the cap controls maceration intensity relative to the vigor of fermentation. the wine was racked three times, aged in steel vats for five months and for at least one additional month after bottling. production: 2,600 bottles. ruby red in color. hints of black pepper and nutmeg enhance its characteristically spicy bouquet. it is fresh, full-bodied with a mellow, discreet tannin profile. excellent alongside red meat (carbonada) and martin sec pears. serve at 18-20°c.
