wild ferment-for this wine, only naturally occuring (wild) yeasts are used to start fermentation. the must is placed in small stainless steel tanks as well as in oak barrels. fermentation is left to complete at its own pace, thus imparting unique and different characteristics on each tank & barrel. therefore, wild ferment refers to the unassisted fermentation of the wine.
