in the language of old "d'oc", "l'ostal" meant both a shelter and the family group that lived within it. in the middle of our field in la liviniere, vines or "estibals" are planted on the hillside between wood and scrubland in argilo-limestone soils. the syrah, carignane and syrah are vinified separately, then assembled and matured in barrels of french oak for 12 months. full-bodied, rich and elegant, this fermentation produces the classic expression of the high-class wines of languedoc.
