our wines are made in the vineyard where we spend lots of our time, working in harmony with the wildlife on rocky soils.
the grapes are hand-picked before being fermented and macerated in concrete tanks for 4 weeks. the wine is aged for 24 months in barrel and tank before being bottled on the estate.
you can cellar the wine for 7 to 8 years and drink it with game, duck, or grilled red meat. decant at least one hour ahead of drinking.
