harvest: manual. on february 13, 2007 at its optimal ripeness
winemaking: manual selection of the grapes. direct pressing without destemming, static ranking at 10°c, fermentation in barrels, natural stabilizing without the use of clarifying agents
aging: 8 months in new french oak, blended before bottling with 30% of fermented wine and stored in stainless steel tanks.
