each variety of apasos was picked from its own distinct vines, based on the characteristics of the climate and soil of ronda. the grapes were harvested by hand at full maturation which gives them their fruit-filled aromas and vibrant colors. apasos is aged for 12 months in french oak, giving it a complex character and structure that conserves its fruitfulness (maybe a more wine-appropriate jargon for "fruitfulness"?)
