baraccone is the name of the area were the winery was built and where in the past the jugglers used to stop (in italian jugglers=baracconi). from these ancient memories the logo of the winery was shaped: infact it represents a juggler.
the gutturnio superiore is made with the traditional grapes of barbera and bonarda (locally known as bonarda) and it can be drunk only one year after the harvest even though it gets better if it refines some years.
the colombaia is macerated on the skins for about 10 days with many wine pressing and pumping over.
after the malo-lactic fermentation the wine stays for 3 months in second passage small casks.
the wine stays in bottle at least 8 months and in autumn is ready to be sold.
it goes perfectly with meat courses and aged cheese.
only 3.000 bottles are produced.
